If your kids are like my daughter, the only kind of fish they like is fried fish. Most fried fish coatings are full of carbage, but not this one!
For best results, make sure your pan is very hot before putting the fish in. Otherwise the coating will fall off. Also, make sure there is at least 1/8 inch of lard/oil in the pan at all times to avoid sticking.
Easy Fried Fish
This is perfect for a Keto Friday night fish fry!

Ingredients
- 1/2- 3/4 cup lard
- 3 egg whites (lightly beaten)
- 3 oz pork dust (or crushed pork rinds)
- 4 oz parmesan cheese (powdered)
- 1.5 tsp Old Bay seasoning
- 2 lb cod (or other white fish)
Instructions
- Heat 4 Tbsp lard in a large cast iron skillet over medium heat.
- Beat the egg whites with a fork until slightly foamy. Place in a wide, shallow dish.
- Combine pork dust, parmesan cheese, and Old Bay in another wide, shallow dish.
- When the lard is very hot (a drop of water should sizzle immediately when placed in the pan), pat the fish dry with paper towels. Place a few pieces of fish in the beaten egg whites, turning to coat both sides. Remove fish from egg whites, letting excess drip off, and place in pork dust mixture. Press mixture onto all sides of the fish.
- Place the fish into the hot lard. Cook until well browned on both sides, turning once. Remove fish to a paper-towel-lined plate. Repeat with remaining fish, egg whites, and pork dust mixture until all fish is cooked, adding lard to the pan as needed to keep the lard about 1/8 inch deep.
Notes
You may use palm shortening, avocado oil, or coconut oil in place of the lard.
For dairy-free, substitute extra pork rinds for the parmesan cheese. The coating might not stick as well, so be sure to press it firmly into the fish for best results.
For pescatarian, use one of the oil options listed above in place of lard and use more parmesan cheese instead of pork dust. The coating might not get as crispy, but it will still taste great!
