Braunschweiger Spread

For the second installment in my series on organ meats, I decided to try braunschweiger from US Wellness Meats. Braunschweiger is a sausage made with meat and liver, and can be either beef or pork. Liver is one of the world’s most nutrient dense foods. It contains a lot of vitamin A, and it is preformed vitamin A (retinol). This type of vitamin A is ready to be used by the body, unlike beta-carotene, which the body must convert to retinol before use. Liver is also high in all the B vitamins, folate, EPA, DHA, and the most easily absorbable type of iron (heme iron). Beef liver is especially nutritious, but other types of liver have similar nutrient profiles.

I’ve tried a few types of braunschweiger from my local grocery store. They were all pork. While they tasted good, they did contain some ingredients I would prefer to avoid, such as sugars, starches, and preservatives.

US Wellness Meats Braunschweiger is made from beef, not pork. It also doesn’t contain any sugars or starches. Compared to other braunsweigers I have tried, it is higher in protein, lower in fat, has a stronger flavor, and has a slightly firmer texture. I like thin slices on keto bread that has been toasted in a lightly oiled skillet.

If plain braunschweiger has too strong of a liver flavor for you, you can try the recipe below. I like to serve it with toasted keto bread, these keto goldfish crackers (cut into squares instead of fish shapes), or pork rinds. My kids even like to take this to school for lunch!

  • Combine all ingredients in a large bowl. Mix with a hand mixer until smooth. Refigerate for an hour for a firmer texture.
  • Spread on toasted slices of keto bread, keto crackers, or pork rinds.
